They dont macerate (distil) fruit to create our liqueur as others do, often resulting in an overly sweet, artificial flavour. Instead, winemaking techniques which retain the intense natural characteristics of blackcurrants are used. British Cassis is sweet at first taste with an irresistibly sharp after-kick.
