Top of the range in the production of vermouths from the Jerry Thomas Project, this represents the union between the noble distillate and the sweet, decadent Caribbean rum. Vermouth del Professore Classico is aged in an Old Jamaican Rum Cask Whisky barrels for between 12 and 18 months, depending on the specific batch. This process allows the vermouth to capture the unique character of the Rum. The light gold colour introduces distinctive Jamaican rum aromas. Baked tropical fruits meet rich sweet spices. On the palate, dried pineapple and mango are joined by banana notes. These are all complemented by sweet, sugary notes of cinnamon and clove. This is a smooth and rich vermouth that keeps evolving.
