This is the new 43% ABV expression. This fine aged release is a blend of Rums from the artisanal copper double retort pot still, and traditional twin column, continuous Coffey still at Foursquare Distillery. Initially matured in ex-bourbon cask, it is then given a further maturation in pre-seasoned fine Spanish Oloroso Sherry cask. The result is a delicate fusing of complex flavours giving rise to a Rum of unparalleled excellence. Nose: Complex and evolving. A mix of vanilla, toffee, rich sweet raisins, tamarind, and cacao. With hints of black tea, and brazil nuts. Palate: An initial rush of soft, honied caramel sweetness, that quickly develops into a gentle peachy fruitness. Finish: Lots of tannic, oak-y grip, and notes of vanilla, dried dates and hints of tamarind. Hints of black tea, gentle tobacco fade into a peppery, lasting finish. Doorly\'s rums are crafted in Barbados by R. L. Seale & Co- a 4th generation family-owned business passed from father-to-son since the 1920\'s. The Foursquare Distillery, where it is produced, was built in the 1990\'s on the site of a 17th century sugar factory and is one of the most modern and environmentally friendly distilleries in the world. Current head distiller Richard Seale , has a passion for creating authentic rum with great and honest flavour. Unlike many rum producers, he never adds any sugar or flavour additives after distillation, instead adopting to mature his rum in high quality oak barrels for a longer period than most to naturally mellow the spirit.
