Gaïa de Fortant Coteaux d’Aix en Provence 2020
Fortant, a celebrated winery, and Jean-Luc Rabanel, a two-Michelin-star chef, have joined forces to create wines that pair perfectly with organic, vegetarian Provençal food. They\'ve produced four crisp cuvées with light aromas that harmonise with his vegetable-based dishes. This is our favourite. This blend is fermented at low temperatures and aged in concrete and stainless steel to enhance the flavour without disrupting the citrusy, floral notes of two expressive grape varieties, Vermentino (known locally as Rolle) and Grenache Blanc. This is great with vegan dishes, like ratatouille, but also just as good with white meats.
