Shaw & Smith was founded in 1990 by Martin Shaw and Michael Hill-Smith, Australia’s first ever Australian Master of Wine. Thirty years later it’s one of most in demand names in Australian fine wine. In the cool-climate Adelaide Hills, the duo is committed to the finest soil and vine health, using grazing sheep to farm sustainably and picking every grape by hand. That’s a series of costly practices. But the result is some of the most elegant Shiraz you’ll discover in the New World. This is a restrained and sophisticated wine, with notes of blackberry, black pepper and well-integrated oak. It has ripe tannins that are fantastic with protein-rich meats, like sirloin steak.
