Pardon & Fils is one of the most experienced producers in Beaujolais. And the winemaking is now in the hands of the seventh generation of the family, Eric and Jean-Marc Pardon. They create this in the most northerly of the Beaujolais Crus (officially recognised areas), the rather romantically named Saint-Amour. The celebrated style of Gamay here is remarkably light and fruity. And the Pardons keep things at cool temperatures and shun oak-ageing to capture this at its best. Expect a fine and elegant Beaujolais, with bright flavours of red cherry, strawberry and kirsch. It has light tannins which will pair well with salmon.
