This winery was founded in the 1950s and sold wine in bulk to local wine merchants. When the Descombes took over, in 2017, everything changed. They switched its sights to quality, not quantity – focusing on the environmental conservation of their coveted Burgundy plots. They\'ve even gone as far to plant hedges and trees and use natural fertilisers in the vineyards. This is their Petit Chablis, and it has all the classic flavours you\'d expect: lemon and grapefruit, and a textbook lick of minerality. Enjoy it with salmon tartare.
