Fermentacion Lenta 2019 / Ximenez Spinola

75cl / 14% - A dry white wine made using 100% Pedro Ximénez grapes. Bodegas Ximénez-Spínola plants only this variety in its vineyards on the west side of Jerez. The majority go to its fantastic Sherries but a small amount are devoted to producing rich, round wines for the table. Long fermentation takes place with the skins in French oak, making for a complex profile with raisins, stone fruit and prunes.
