Balam Madurado Raicilla
70cl / 45% - A very traditionally made raicilla from Balam. It uses rhodacantha agave which are cooked in a wood-fired oven before being hand-crushed with mallets, fermented for 23 days and double distilled in a direct-fired clay still before being aged in glass carboys for up to three years to mellow the spirit. It\'s a rounded and creamy raicilla with peppery spice, savoury vegetal notes and a touch of funk.
