Made from Hyogo prefecture\'s finest Yamadanishiki sake-grade rice and mineral-rich groundwater drawn from deep wells at Mount Izumigatake, this 35% polished sake is pressed through a centrifugal machine, to extract and aerate the sake at low temperatures. This not only ensures the junmai daiginjo\'s exquisite acidity and delicate mouthfeel, but enriches it with a complex palate of plump citrus, jam and peach notes that taste both sharp and full-bodied on its exemplary finish. Brewed meticulously to continually claim its peak status among Japanese sake, this junmai daiginjo was awarded an outstanding 95 points by Robert Parker for its concentrated balance of flavour and freshness.
