In France, this sparkling would be called \'Méthode Ancestrale,\' since it undergoes a second fermentation in the bottle, but is not disgorged, leaving a creamy lees deposit at the bottom. The wine has an aroma of great complexity and elegance, with notes of almonds and fresh tropical fruit. It is perfectly balanced between freshness and creaminess, and the finish is very fine, revealing delicate nuances of toasted nuts.
