We've added a few of our own touches to the Tuscan masterpiece that is the Fiorentina. On a creamy base, made with whole-roasted garlic and lemon, we've scattered a generous handful of grilled Italian mushrooms and flakes of Italian fior di latte mozzarella. Then we add spinach, lightly sautéed with onion, garlic and chilli. Our own rendition of an Italian classic.To make pizzas as authentic and delicious as any pizzeria in Italy, our starting point has always been the base. From a 'mother dough' starter, we create sourdough pizza bases in the traditional Neapolitan style.
