We do something called 'Nature Friendly Farming' which means we build special habitats on our farms to encourage all kinds of wonderful wildlife. We grow all our leaves in natural sunlight, so right now they come from our sunnier farms in Portugal and Spain. Surprisingly, this is better for the planet than wasting energy on forcing leaves to grow out of season.If we're not growing, picking or eating leaves, we're dreaming up new varieties. A while back we came up with the idea of pea shoots (much to the delight of our foodie friends).
