Baby Potatoes Recipe in Indian Cuisine Among the innumerable varieties of international cuisines, India is one of the many that uses baby potatoes in cooking. The rich and neutral taste of potatoes goes very well with the savoury and flavourful dishes of Indian cuisine. Here is a popular baby potato recipe for Indian cooking – and is probably the most commonly prepared dish for an Indian take on baby potatoes. SPICY BABY POTATOES Ingredients: 12 pieces of baby potatoes Sunflower Oil, as required 1 Dry Red Chilli 1 teaspoon of cumin seeds (Jeera) 1 sprig of curry leaves, optional 1 teaspoon of coriander powder (Dhania) ½ teaspoon of turmeric powder (Haldi) 1 teaspoon of cumin powder (Jeera) 1 teaspoon of red chilli powder 1 teaspoon of garam masala powder 1 teaspoon of amchur (Dry Mango Powder) Salt to taste 1 teaspoon of lemon juice Procedure/s: In a deep pot, boil water and put the baby potatoes in, and cook for about 20 minutes. You can choose to remove the skin or leave it on. Set aside. In a pan, heat oil over medium heat then adds the dry red chilli, curry leaves, and cumin seeds. Add the coriander powder, red chilli powder, amchur, cumin powder, garam masala powder, and turmeric powder. Stir well. Strain the baby potatoes and add them to the pan. Mix well for at least 6 minutes or until the spices are well incorporated with the baby potatoes. Season with salt, and then add the lemon juice. Stir well. Once done, turn off the heat and add the chopped coriander leaves, mix well. Transfer to a serving plate. Serve and enjoy!
