Little Hereford is handmade at our local dairy at Monkland . It is made to Helen Yeld's original recipe. She was Herefordshire's chief dairy maid in the 19th Century. Little Hereford has a creamy texture and good lingering flavour. One of Mousetrap's very elderly customers still remembers Ellen from when she was a child, she would ride around on her bike, in wonderful full length dress and always wore a hat with an enourmous feather, selling cheese out of her basket on the front - not the image I had in mind of a Dairy maid!
