Montgomery is a wonderful real farmhouse cheddar made at Manor Farm near Yeovil in Somerset. It is made from the milk of the Montgomery's own herd of Friesan cows, wrapped in muslin and matured for 12 - 18 months during which time it develops a deep, rich, spicy flavour. Made with fresh unpasteurised milk using traditional calf rennet, this is truely a traditional farmhouse cheddar, even down the old slow peg mill used which gives the cheese its slightly brittle characteristic.
