Featuring 6 jars of the finest Antipasti grown and processed by "I Contadini " on their farm in Ugento, Italy. Contents include: 1 x Cime Di Rapa Alla Pugliese (230g) It is a typically Salento variety of turnip. It is part of the story of our identity and our typical dishes. It is cultivated from October, and harvested in different stages from December to March. The harvest time depends on the varieties of the plant, but also on the technique that consists in the manual recision of the most tender peaks in different stages: therefore several steps are made on the same plant. Once harvested the turnips are washed by hand to remove the hardest, seared, seasoned and oversized parts in extra virgin olive oil. 1 x Antipasto Grande Salento (230g) It is a typically Salento variety of turnip. Once harvested the turnips are washed by hand to remove the hardest, seared, seasoned and oversized parts in extra virgin olive oil. 1 x Zucchine Essicate Al Sole (230g) We grow zucchini in the open field in April, and collect them manually in June and July. We wash them, select them, cut them into slices with the peel and let them dry in the sun on the frames of our farm for 3-4 days. After that the zucchini are selected, washed and flavored with Mediterranean spices. Finally they are marinated in extra virgin olive oil. To get 500 grams of dried zucchini you need about 10 kg of fresh, and over 120 hours of processing! 1 x Melanzanie Alla Crudaiola (230g) A particular variety of long eggplant grown in May and begin harvesting in July, and end it in September. Cut  into washers, we let them ripen in tanning and then we pot them with fresh mint and just a touch of spice. The result is surprising, a simple but at the same time fresh dish, in which you clearly feel the lively character of eggplant, in perfect symmetry with the other ingredients. 1 x Pate Di Peperoni (230g) Sweet red peppers are grown in the field opened in May by our farm, and harvested manually between August and September. They are washed, selected, cut into slices and matured in salt for a short time. Finally, once again washed and selected, finally shredded with other Mediterranean vegetables and spices to obtain a delicious pâté, which is invading in extra virgin olive oil. All the processing is handmade to obtain a tasty and tasty preserve like those of the past. 1 x Pate Di Carciofi (230g) The Violetto is a very special native variety of artichoke. The name derives from the particular purple coloration that takes on the artichoke towards maturation. We cultivate it starting from October, the harvest begins in March and ends at the beginning of June. The artichoke is collected and processed manually and gently, within 24 hours. The pate is produced simply using artichokes and extra virgin olive oil and natural ingredients.
