It can be roasted and served pink, the sweet soft meat is tender and delicious. Herdwick sheep are Lakelands’ native sheep breed, they eat a natural diet of fell grasses and heather. ‘Hogget’ is sheep meat from an animal between 1-2 years old and is a delicious cross between tender lamb and full flavoured mutton. This Herdwick Hogget is dry aged for 7 days to enhance the texture and flavour.
