Taleggio is a washed-rind Italian cheese from Lombardy which is aged in caves. It has a characteristic pink rind, is semi-soft and creamy and relatively mild when young, developing in flavour as it ages. It melts beautifully and is therefore very good in cooked dishes. Distinctively square, it matures in 6 - 10 weeks and is washed with a brine wash.
