The Fish Society fillet fresh mackerel from either Scotland or Cornwall. Sometimes people have the misconception that mackerel / mackerel fillets have a strong fishy smell. This is because the mackerel they've smelt isn't very fresh. They ensure theirs is 'stiff alive' when filleting and the smell is subtle. The flavour is also not as strong with extremely fresh mackerel. Mackerel is a highly versatile fish. It's great when marinated and grilled to be used in salads, smoked, cured or even eaten raw as sashimi or sushi. The high oil content gives the mackerel a beautiful taste when eaten raw. The FIsh Society don't pin bone the mackerel fillets so be a little careful when eating them.
