Manchego PDO is one of the most popular and well-known cheeses from mainland Spain with a firm, slightly open textured cheese with a nutty flavour. Aged for 12 months creating an intense depth of flavour and those delicious characteristic calcium crystals which give the cheese that delightful crunch. Pairing Suggestion - Quince Paste Pave Cobble Weight: approx 200g. A gorgeous little cheese with a unique truncated shape and a soft, springy texture that becomes meltingly creamy with age. Pale silver in appearance due to the cheese being coated lightly in ash to create the geotrichum rind and leave a very subtle peppery undertone, boasting a delicious rind that becomes dominated by blues and greens as it ages. The initial flavours of sweet cream followed by nutty notes and a soft tasting, rich, opulent and smooth flavour - developing more complexity when aged. The texture becomes increasingly silky as the cheese matures. once at its softest, we suggest cutting the top off the pyramid cheese and dipping bread and crackers into the liquid cheese inside like a little mini fondue.  PAIRING SUGGESTION - Lemon Preserve This individual cheese weighs approx. 200g.
