It may be a bit cheaper than Turbot but it doesn\'t sacrifice anything in quality or taste. This fish lends itself very well to being paired with stronger flavours, so think capers, maybe even a tapenade.  Sustainability - our rating 6/10 Fisheries don\'t target this species specifically, it is mostly caught as bycatch, so fishing pressue is light. Its management is combined with turbot and the stock levels are not currently overfished.
