Each pack contains between 1-3 strips of engawa (Brill fin muscle) depending on their size Dip in some soy sauce, add a little ginger and you are good to go For sushi, a main course requires about 150g of fish per person Engawa is the fin muscle of a flat fish. It\'s chewy boardering on crunchy and is a culinary favorite in sushi restaurants. If you want to try something new, we highly recommend giving it a go. There is nothing else like it and it can be served very simply with a dip in some soy sauce and if you\'re feeling frisky, a bit of ginger.  Sustainability - our rating 6/10 Fisheries don\'t target this species specifically, it is mostly caught as bycatch, so fishing pressue is light. Its management is combined with turbot and the stock levels are not currently overfished.
